Keto Mexican Casserole Recipe (Ground Beef or Turkey)

Keto Mexican Casserole As A Comfort Food

A spicy, cheesy food is a great choice when you need a comfort food. 

Traditional comfort food recipes like grandma made were always delicious and usually clean.  Unfortunately, today they are usually loaded with additives, GMO flour, sugar, all which you don't need. 

This Keto Mexican Casserole Recipe is a great comfort food to warm you up, but will keep the ingredients clean and carbs low for your healthy Keto lifestyle.

Note:  When you pour the butter and cheese mixture over the meat, it's an odd color, kinda pink.  

It doesn't look that appetizing but it tasted great, much better than it looked. Just don't show any family members what it looks like until it is cooked! haha

Important Clean Ingredients

You should always use uncured bacon.  Nitrates have been linked to cancer in some studies.

ButcherBox or SimpleTruth Bacon from Kroger both are uncured.

For beef, grass fed beef is always the best choice. Make sure the beef is also grass finished.

Some farmers will let a cow eat grass for most of its life, but then pen it up and feed it cheap bread or GMO corn at near the end to fatten it up.

The penning process puts stress on the cow and then you eat the meat, resulting in stress released into your body.

If we avoid gluten and GMO ingredients, why would we want to eat meat that contains these things?

This is why I have ButcherBox meats delivered to my door. They only use farmers that raise animals using sustainable techniques and the cows are grass fed and grass finished.

Studies have linked CLA found only in grass fed beef to cancer prevention.

If you've seen my other recipes, you know I'm a big fan of cayenne pepper.

Cayenne pepper has some health benefits along with the great taste. It can lower blood pressure, increase metabolism, and may even reduce pain.

You can omit the cayenne, or put less or more, depending on your taste.

Easy Keto Ground Beef or Turkey Cheese Cauliflower Tex Mex Cassserole

Ingredients
  

  • 4 slices Bacon Nitrate Free - ButcherBox is a great option
  • 1 lb. Grass Fed Ground Beef or Turkey ButcherBox great option
  • 1 Onion chopped
  • 1 Bell Pepper chopped
  • 2 tsp Garlic crushed
  • 2 tsp Worcestershire Sauce Organic and gluten free preferred
  • 2 cups Riced Cauliflower frozen works and MUCH easier
  • 1 cup Cheddar Cheese Grated
  • 2 oz Cream Cheese
  • 2 tbsp Heavy Cream
  • 2 Eggs
  • 3 tbsp Butter
  • 1 cup Salsa organic
  • 2 tsp Cayenne Pepper
  • 2 tsp Garlic Powder
  • Pink Salt to taste
  • Black Pepper
  • Non Stick Cooking Spray Avocado best

Instructions
 

  • Preheat oven to 400 degrees F (204 C)
  • Spray 9X13 casserole dish with non stick spray
  • Cook bacon in large frying pan, Ninja Foodi or air fryer, and reserve grease
  • Drain bacon on a paper towel and set aside
  • Add 1 tablespoon butter to the bacon grease in large frying pan
  • Cook pepper, garlic and onions in bacon grease/butter combo until tender
  • Move cooked pepper mixture to 9X9 casserole dish
  • Add ground beef or turkey to frying pan
  • Cook ground beef on medium until done and drain
  • Add Worcestershire sauce, salt, pepper, cayenne, garlic powder and cooked bacon to beef
  • Heat all together for about 5 minutes on low/medium heat
  • Add beef mixture to pepper mixture in casserole dish

Cauliflower Sauce

  • Cook frozen rice as directed on package
  • In medium bowl beat eggs while rice is cooking
  • Add 2 Tbsp melted butter, cream cheese, cream, 1/4 cup grated cheese, and Salsa to eggs, mixing well
  • Add cooked cauliflower to egg mixture and mix all together
  • Add this sauce mixture to the casserole dish and mix all together
  • Place in preheated oven and cook for 20 minutes
  • Top with remaining cheese and cook 5 -10 more minutes
  • Allow to cool for 5 minutes and enjoy!

Cooking times can vary based on your appliance and altitude/elevation.

Serving Suggestion for Keto Mexican Casserole Recipe

Top with sour cream and Pork Rinds or  Quest Protein Chips 

For extra healthy fat, serve with a few slices of avocado. 

It was really good as leftovers also the next 2 days. I heated it up with extra cheese on top.

    This recipe is AMAZING and perfect for keto!! I crumbled pork rinds and put avocado on top and it made it even better! This is definitely going to be one of my new “go-to’s”

    Excellent! So tasty. Did make one mistake however. Toward the end of the recipe it says to add “grated cheese” and instead of reaching for the grated cheddar (and being Italian) I grabbed some Romano cheese and threw it in!

  5. Made the ground beef cheese and cauliflower casserole for dinner last night. Delicious! However, there were no instructions as to what to do with bacon so I chopped it up up and put it on top with the cheddar on the second round in oven! Thoughts?
