Oh country white cream gravy, how I missed you! Southern cream gravy was a MUST in almost all our meals growing up. This Keto Southern White Country Cream Gravy Recipe with almond flour hits the spot for a low carb and gluten free option. 

The smell of gravy brings back fond memories and conjures up feelings of comfort.  This is why I went on a quest to create some delicious Keto cream white gravy.

Is Old Fashioned Cream Gravy Allowed On Keto Or a Low Carb Diet?

This is a popular question. along with is gravy high in carbs?

Traditional gravy is full of unhealthy ingredients. One ingredient is an unhealthy oil, such as vegetable, Canola or crisco.  (learn more about oils in 13 Healthiest And Least Healthy Oils For Cooking.

Conventional gravy also contains white flour, gluten, and dairy milk, all full of carbs and less than desirable ingredients.  This makes it unallowable when following a clean healthy Keto lifestyle or diet. 

For all these reasons, I've been skipping the gravy for several years. It's not worth paying the price of a flare up of my autoimmune issues and weight gain to eat it. 

This gravy makes it possible to eat gravy while following a Ketogenic diet!

History of Cream Gravy

Cream gravy's origin goes back hundreds of years. According to this article from The Washington Post, biscuits and gravy may go back to the Revolutionary War. 

My mom said it was created due to a lack of money and food. The few ingredients were inexpensive and the gravy helped fill up their bellies. My mom said they  even fed it to the animals and had a chocolate version!

Cream white gravy is more of a U.S. Southern food than other parts of the world, passed on from generation to generation. When traveling, it seems brown gravy is more popular.

We weren't rich by any means as I was growing up, but we had money for food, and still ate lots of gravy due to the taste.  We ate it on biscuits, toast, chicken fried steak, mashed potatoes….yum my mouth is watering thinking about it.

I used to joke and say my thighs would be half their size without cream gravy and I have a feeling that is very true.

Following Keto has made a huge difference in my health and weight, making it not worth going back, but I wanted that same taste if possible.

How Do You Thicken Low Carb Gravy?

The best way to thicken up your gravy is with almond flour and xanthan gum. 

Xanthan gum is a thickening agent and a little bit goes a LONG way. I've had my package for a long time and it looks barley used.  

Start with 1/4 tsp, adding a little at a time, testing until you get the desired thickness.  It will thicken up fast!

Recipe for Keto Cream White Gravy

Keto Southern Cream Gravy

Ingredients
  

  • 2 tbsp Grease drippings left over from cooking meat
  • 1 tbsp Cream Cheese
  • 1 tbsp Almond Flour
  • 1/2 tsp Xanthum Gum
  • 2 tbsp Almond Milk
  • 1 Cup Whipping Cream
  • Pink salt
  • Black pepper

Instructions
 

  • Add cream cheese to hot grease and stir until melted over low/med heat.
  • Add almond flour and xanthun gum to the hot grease, continuously stirring, and cook on medium for 1-2 minutes until it is a little brown. Watch closely as it will brown quickly.
  • Add almond milk and whipping cream slowly to the skillet.
  • Mix using either a whisk or wooden spoon, ensuring all lumps are out.
  • Turn heat to low and continue stirring a couple of minutes until mixture is thick. If too thick, add a little more whipping cream or almond milk.
  • Add salt and pepper to taste. ( I like a lot of pepper)

A really good breakfast is to cook some crumbled up sausage, leave it in the pan and then add these ingredients to it.  OH YUM!
