Keto Instant Pot / Ninja Foodi Meatloaf with Radishes

This Keto Instant Pot / Ninja Foodi Meatloaf with Radishes is a quick and easy way to have a delicious low carb meal!  It's also gluten and sugar free and a great recipe for diabetics. 

Ready in less than 30 minutes by pressure cooking, it certainly beats cooking it in the oven for 1 hour, not counting the prep time. 

Included below is also how to cook it in the oven and air fryer if you prefer that over pressure cooking. 

Mine didn't have the same luxurious look as in restaurants, but it tasted great.

Why Radishes?

Potatoes are not low carb or Keto friendly with up to 30 carbs per potato and radishes make a delicious substitute. 

I never thought I would see the day I would like radishes, but I love them!

History of Meatloaf

Do you remember eating dry meatloaf with creamed potatoes and usually corn in TV dinners growing up? I vividly remember this so I'm surprised I can eat meatloaf now after that! 

According to bonappetit.com, some believe meatloaf, or its closest antecedent, emerged in medieval Europe, in the fifth century, in a dish of meat scraps with fruits, nuts and seasonings.

Meatloaf has had many iterations since then and even started out being for breakfast.

Americans have embraced meatloaf more than other countries and German immigrants enjoyed it with ground pork and cornmeal.

A meatloaf recipe for ground veal, bread crumbs and eggs appeared in the Boston Cooking-School Cook Book as far back as the late 1800’s.  

Since bread crumbs, crackers and other filler used in meatloaf are high in carbs, this recipe uses pork rinds. 

If you don’t have any pork rinds, you substitute almond flour, flax seed or Keto crackers.
Keto Instant Pot Meatloaf low carb

Keto Instant Pot Meat Loaf

Ingredients
  

  • 1 lb Grass fed and finished ground beef
  • 2 Cage free eggs
  • 1 medium Onion chopped
  • 1 small Bell pepper chopped
  • 1 tbsp Worcestershire sauce
  • 1/2 cup Pork rinds crushed
  • 1 tbsp Crushed garlic
  • 1/2 tsp Black pepper
  • 1/2 tsp Cayenne pepper
  • 3/4 cup Tomato sauce
  • 1 tsp Oregano or seasoning of your choice
  • 2 tbsp Low carb ketchup Primal Kitchen Sugar Free
  • 1 tsp Monk Fruit or more to taste
  • 1 bunch Radishes
  • 1 cup Chicken or bone broth
  • Avocado oil spray
  • Bacon optional

Instructions
 

  • Spread or spray some avocado oil on the bottom of the Instant Pot
  • Clean the radishes and cut the ends off
  • Add radishes to Instant Pot
  • Pour chicken or bone broth over potatoes
  • Cut up butter on top of radishes
  • Salt and pepper radishes to taste (could also add garlic powder or other seasoning)
  • Place a trivet over them or an egg rack  mentioned below
  • Make a foil packet for the meatloaf
  • Mix all the meatloaf ingredients, with half the monk fruit, excluding ketchup, together in a bowl
  • Mix well, just something about meatloaf I like to mix it with my hands
  • Place the meatloaf into the foil packet
  • Place the foil packet on top of the trivet or egg rack above the radishes
  • Add remaining monk fruit to the ketchup and stir
  • Spread ketchup on top of the meatloaf
  • Top with bacon (optional)
  • Close Instant Pot Lid
  • Make sure pressure valve is closed
  • Set manual timer for 30 minutes
  • Allow the pot to come to pressure and then cook for 30 minutes
  • Do a pressure quick release, according to Instant Pot directions
  • Check internal temperature of meatloaf to make sure the meatloaf is at 155 - 160 degrees
  • If desired - put meatloaf on a cookie sheet and put more ketchup on top and broil for a few minutes until bubbly and top caramelizes a little
  • Enjoy!

Cooking times can vary based on your appliance and altitude/elevation.

Always check with a meat thermometer to be safe! 

Oven Cooking for Keto Meatloaf

If you don't have an Instant Pot, you can bake in the oven at 400 degrees for 1 hour in a meatloaf pan or casserole dish. 

Check with meat thermometer to internal temperature of 155 to 160 F.

Air Fryer Keto Meatloaf

Preheat air fryer to 390 or 400 degrees (without foil or parchment paper)

Place foil or parchment paper round in basket and place meatloaf on air fryer rack and cook at 390 degrees (400 if yours goes that high) for 30 minutes and check to internal temperature of 155 to 160 F.

Note: do not heat up air fryer with parchment paper in basket until you have the meat loaf in there weighing down the paper. It can get blown into the vent.
