Looking For Keto Mashed Potatoes?

Trying to eat Keto or low carb but LOVE mashed (cream) potatoes?  I feel your pain!  

We tend to eat way too many potatoes, almost every meal. Have you ever met a potato you didn't like? I know I haven't! – ha

This Keto Mashed Potato recipe, also known as Keto Loaded Cauliflower Casserole is the best substitute I've found for my beloved mashed or cream potatoes and it's under 4 carbs per serving compared to 37 carbs for one potato!

You might ask “Is mashed cauliflower healthier than mashed potatoes?”

The answer is yes, very much so!
By eating cauliflower instead of potatoes, you save ~ 53 calories and 13 grams of carbs, per half cup! I don't know about you, but I usually eat twice that much- ha. 
Potatoes raise your blood sugar much faster than cauliflower because of the higher glycemic index.

When I struggled with my blood sugar levels, I was eating potatoes almost every day. Now that I've switched to cauliflower, my blood sugar is back to normal.

Harvard points out in this article, the link between carbs and blood sugar. Potatoes are considered a high glycemic food.

High glycemic foods raise your insulin levels, which can lead to fat storage and feeling hungry all the time. 

These Keto Mashed Potatoes use Cauliflower instead of high carb potatoes.  I've learned that many of the Keto substitutes like using zucchini instead of pasta (find zucchini noodle/pasta recipe here) are really good!

Frozen Cauliflower Rice to Cauliflower Mash

Make it easy on yourself and get this riced cauliflower from Amazon or some from a grocery store in the freezer section ready to go.  Simple, fast and MUCH less messy.

By using the Riced Cauliflower, you don't have to go through the process of mashing the rice.  It's creamy on its own.

I never dreamed I would like cauliflower and I still don't prefer it raw or even roasted, but this recipe is YUMMY!

You can make these Keto mashed potatoes for any quick meal as a side. You can also make it for Thanksgiving or other special occasions. This way, while others eat mashed potatoes, you can have a low carb treat.

When you lose weight and feel so much better, it's not worth the extra carbs in traditional  mashed potatoes.

Mashed Keto Cauliflower (Potatoes) Short Cut

Sometimes you need mashed cauliflower even faster than the recipe below when you're in a hurry.

Simply heat the rice up in a saucepan, add some butter, salt, pepper and cheese, mix up and eat – Viola!  Very fast side dish.

Try to use natural and organic ingredients whenever you can – so much better for your body.

TIP

Purchase 0 – 1 carb sour cream, there are different brands with varying carbs.

You should also use uncured bacon, without added nitrates. You can either find it at your local grocery store that carries healthy food.

Keto Mashed Potatoes

Simple Loaded Mashed Cauliflower (Potato Substitute)

Ingredients
  

  • 2 cups Cauliflower Rice
  • 3 tbsp Butter
  • 1/2 cup Sour Cream check carbs
  • 1 cup Grated Cheese
  • 2 pieces Bacon uncured
  • 1/4 tsp Garlic Powder
  • 1 tbsp Minced Chives
  • Salt to taste
  • Black Pepper to taste
  • Cayenne Pepper to taste, optional

Instructions
 

  • Preheat oven to 350 degrees
  • Heat up cauliflower rice per package directions, less than 5 minutes. (You could rice your own cauliflower in the food processor, but that's just too messy for me.)
  • Add butter, seasonings and sour cream
  • Mix together
  • If the consistency is not smooth enough, you can mash with a potato masher
  • Pour into 8x8 casserole dish
  • Top with cheese and bacon
  • Bake until cheese melts, about 5 minutes
  • Top with chives

    I gave 4 stars because I didn’t have a masher or food processor and thats my fault. However, the frozen cauliflower rice cooked with the recipes ingredients was great! I had hoped cooking it as directed would have made it soft. All in all, it was very tasty!

    If you want this “mashed” take an immersion blender and it will become mashed. I did this after cooking the rice cauliflower with some butter on the stove, and then substituted cream cheese and a little heavy cream (just a dab) because I didn’t have sour cream. Also I didn’t put as much shredded cheddar on the top and of course you must cook the bacon first before sprinkling chopped on top of the shredded cheese.

  3. I’m a little confused. You call this Simple Loaded Mashed Cauliflower! But no where in the directions do you mash the riced cauliflower, it doesn’t become mashed just by cooking it. So the recipe should be called Simple Loaded Riced Cauliflower.

    • Hi Richard! in the 3rd paragraph I say “Don’t take the time to steam and cut up the cauliflower after a full day – get some frozen organic cauliflower rice in the freezer section ready to go.  Simple, fast and MUCH less messy.”

      If you buy the frozen riced cauliflower in the freezer section, all you have to do it pour it in a pan and heat it up. It’s that easy! I tried ricing the cauliflower myself and it’s such a mess, I just don’t find the need to go through all that – ha. Hope this helps and you enjoy the recipe!
