Keto Zucchini Noodles

These Keto Zucchini Noodles (aka Low Carb Zoodles) are delicious, easy to make and a great substitute for Keto or gluten free pasta.

You may be surprised at how good these are, they really don't have that much of a taste to me and make a great foundation for Keto spaghetti, Low Carb Shrimp Alfredo, or any dish where you would normally use pasta. 

You can also use them as a simple, quick side dish.

Why Keto Zucchini Noodles Instead of Gluten Free Pasta?

Gluten free pasta is loaded with carbs and many with preservatives and additives. Most brands are also made out of genetically modified corn which your body doesn't always digest well. 

By eating these zucchini noodles, you are getting only whole clean food and you're skipping the chemicals which is always important. 

Zucchini is also reach in nutrients.

According to healthline.com, Zucchini is rich in manganese, zeaxanthin, vitamins A and C, and lutein, all which contribute to healthy vision and may lower your risk of age-related eye diseases.

How Do Zucchini Noodles Taste?

Are you worried about the taste?  I was too – I bought a tool to spiral vegetables and left it in my cabinet for many years because the idea of green zucchini noodles just didn't sound good, but boy was I wrong! 

After starting the Keto diet, I decided I needed more green color in my diet so I pulled it and started making low carb zucchini noodles.

Don't be afraid of these being green, I was pleasantly surprised that they didn't have a strong taste at all.  It has really helped me get over missing pasta and it and can help you too.

If you try these, you may become obsessed like me.

 

Try to find organic zucchini when you can or grow your own in a garden! 

 

Upgraded Spiralizer

After being obsessed with making zucchini noodles, I updated my spiralizer to a better version. It is SO much easier and there is not as much waste.

When you use this tool to make the Keto Zucchini Noodles, cut off both ends of the zucchini to keep it even.  This comes with 5 blades so you can use all sorts of vegetables. It has over 11,000 reviews and 4.5 stars and I agree with them all!

 

 

Selecting Zucchini For Your Keto Noodles

Select the smaller, younger and firm zucchini.  Usually the slender ones 2-8 inches are better. 
It's also best when it is a nice bright green and no black spots or soft parts on it. 
Zucchini tends to get tougher as it grows.

I buy organic zucchini whenever possible. If I do buy conventional zucchini, I wash it with Young Living's Thieves vegetable wash.

Keto, Low Carb Zucchini Noodles

Ingredients
  

  • 1 Zucchini Medium
  • 1 tbsp Avocado Oil
  • 1 tbsp Garlic Powder
  • 1 tbsp Black Pepper
  • 1/2 tbsp Cayenne Pepper Optional

Instructions
 

  • Rinse zucchini
  • Wipe dry with paper towel
  • Cut off the opposite end of the stem, if using Veggetti, both sides if using a spiralizer
  • Heat avocado oil and ½ the garlic powder in a small skillet over medium heat
  • Spiral the zucchini and let it drop into the oil
  • Add seasonings or add more for your taste
  • Cook for about 3- 5 minutes, using tongs to move the zucchini noodles around in the pan
  • Move to plate
  • You can add salt to taste, but wait until it finished cooking. While cooking can bring out more moisture
  • Sometimes I use a paper towel to soak up moisture if there is extra on the plate

Use these Keto Zucchini Noodles as a substitution for any noodles in your favorite recipes. They are also good with just salt, pepper and a little olive or avocado oil.

If you use the Veggetti, you will have some zucchini left over on the one end you did not cut.  (the whole zucchini will not go through the tool) I store this in the fridge until I have a few and then slice them up for roasting with onion and summer squash. YUM!

Storage – How To Freeze Zucchini Noodles 

Do you bring vegetables like zucchini home and it sits in the refrigerator and ruins? I'm so bad about this. UGH. 

One way to save your zucchini is to store it in the freezer.  This makes it easy to pull these out for a quick Keto meal. 

  • Wash your zucchini
  • Create your noodles in the spiralizer or Veggetti. 
  • Pat dry with a paper towel
  • Place in plastic storage bags 
  • Label with date
  • Store in freezer for up to 3 – 5 months
  • When ready to use, thaw and cook as directed on recipe
