Keto Instant Pot Meat Loaf

Ingredients

Grass fed and finished ground beef

Cage free eggs

Primal Kitchen Sugar Free

Monk Fruit
or more to taste

Radishes
1

Chicken or bone broth
Avocado oil spray
Bacon
optional
Instructions
Spread or spray some avocado oil on the bottom of the Instant Pot
Clean the radishes and cut the ends off
Add radishes to Instant Pot
Pour chicken or bone broth over potatoes
Cut up butter on top of radishes
Salt and pepper radishes to taste (could also add garlic powder or other seasoning)
Place a trivet over them or an
egg rackĀ
mentioned below
Make a foil packet for the meatloaf
Mix all the meatloaf ingredients, with half the monk fruit, excluding ketchup, together in a bowl
Mix well, just something about meatloaf I like to mix it with my hands
Place the meatloaf into the foil packet
Place the foil packet on top of the trivet or egg rack above the radishes
Add remaining monk fruit to the ketchup and stir
Spread ketchup on top of the meatloaf
Top with bacon (optional)
Close Instant Pot Lid
Make sure pressure valve is closed
Set manual timer for 30 minutes
Allow the pot to come to pressure and then cook for 30 minutes
Do a pressure quick release, according to Instant Pot directions
Check internal temperature of meatloaf to make sure the meatloaf is at 155 - 160 degrees
If desired - put meatloaf on a cookie sheet and put more ketchup on top and broil for a few minutes until bubbly and top caramelizes a little
