Trying to follow a Keto, low carb, or gluten free diet or way of eating?  Looking for a chicken recipe the whole family will love?  I found one!  I made this chicken tonight and it was a big hit. It only contains 4 net carbs. Winner, winner, chicken dinner!

How can you go wrong with this dish when you see what's in it? Bacon, chicken, cream cheese, cheddar cheese, Golden Monk Fruit (natural substitute for brown sugar) and some awesome seasonings.  I'll warn you that I love a little kick to my food, so you may want to omit or decrease the cayenne pepper if you need a milder flavor.

Let's Talk About Chicken

Chicken is a great source of protein.  I prefer to buy organic chicken so that I know it has not been treated with hormones or antibiotics and it is free range. Also, knowing the food the chickens were fed is free of pesticides only makes sense to me.

Boneless, skinless chicken breast are my preference but you can use any part of the chicken for this that you prefer.

By far the best chicken I have even found is from ButcherBox.  ButcherBox is a home delivery service that serves only grass fed beef and hormone and antibiotic free meats. I know the chicken is good quality and it's delicious.

I have not been disappointed and have received many deliveries. When following a low carb lifestyle, having good healthy meat on hand is important.  I had to travel at least 30 minutes to find good meat so this is much more convenient.

ButcherBox Special

Be very careful about buying “natural” chicken in grocery stores. Natural chicken is not certified by the USDA as organic and when you think about it, hopefully all chicken is “natural”.

My daughter pointed out to me that you don't want to buy “vegetarian fed” chicken either. It sounded good to me, but then she said, “don't chickens eat bugs?”  In order for a chicken to be fed a purely vegetarian diet, they would have to be caged up and certainly not free range.

Please remember to handle raw chicken carefully and clean surfaces with hot soapy water to prevent the spread of salmonella. You can learn more here in an article from Purdue.  I keep a spray bottle of Thieves Cleaner mixed with water nearby and spray it often to keep the surfaces clean.  I also wash my hands so many times, they are dry when I am finished.

The article linked above says not to rinse chicken to prevent the splattering of bacteria, but I cannot stand to eat it without rinsing it first.  I just make sure I spray and wipe the sink and surroundings area thoroughly.

Did Somebody Say Bacon?

I LOVE bacon, but it's important to me to buy bacon without added chemical nitrates. Some people on a low carb diet eat way too many meats with nitrates.

Nitrates are inorganic compounds that contain nitrogen and oxygen. The compounds are combined with sodium and potassium to make the nitrate used as preservatives in bacon, lunch meats, franks, etc. Doesn't sound that bad, but according to some studies out there, it may be harmful.

Some of these studies show that nitrates can become carcinogenic (cancer causing) when heated up.  I don't know about you, but I prefer my bacon cooked so I will go with uncured bacon.

The International Agency for the Research of Cancer classify nitrates “probably carcinogenic” to humans. I know there is a big debate about this and some say what we ingest are safe levels, but I prefer to not risk it since I am a cancer survivor.

I either buy bacon from Kroger (Simple Truth Brand) or from ButcherBox. (see above)

I served this with deviled eggs, mashed cauliflower and a few garlic stuffed olives. I had already inhaled the eggs before I took the picture. It would be good to add a nice side salad, avocado, or broccoli with this since it contains 0 fiber.

If you have enough carbs left for the day, a little bit of low carb barbecue sauce is yummy on it. Measure out your serving size, only having 1 – 2 tablespoons.

Ingredients

    • 1 package of chicken breast (or chicken tenders)
    • 6-8 slices of bacon
    • 1 tablespoon of avocado oil
    • 4-6 ounces of cream cheese (leave in fridge until ready to use to ease slicing it)
    • 1 cup grated cheddar cheese
    • 1/2 cup Golden Monk Fruit
    • 1/4 teaspoon salt
    • 1/2 teaspoon pepper
    • 1/4 teaspoon cayenne pepper (more or less for taste)
    • 1/4 teaspoon onion powder
    • 1/2 teaspoon garlic powder
    • 2 teaspoons paprika

Directions

Preheat oven to 375 degrees. Pour avocado oil in the bottom of a 9X11 glass casserole dish and spread around to coat the bottom or spray with avocado spray.

Rinse chicken and cut up into 6-8 pieces, unless you bought tenders.

In a medium size bowl, mix the Monk Fruit and spices together. Take each piece of chicken and dredge it in the spice mixture covering both sides. Place the chicken into the pan.

Slice the cold cream cheese into 6-8 pieces and place on top of each piece of chicken. Next, wrap the chicken with a piece of bacon.

Sprinkle any remaining spice mix on top of the bacon.

Bake at 375 degrees for 30 minutes.  Remove from oven and cover with cheddar cheese. I sprinkled a little paprika on the cheese. Return to the oven and bake for an additional 5 minutes or until cheese is melted.

Makes 6-8 servings, 1 piece of chicken each. I had 2 pieces but don't tell anyone. ☺️

    • Hi Jena Leigh. It is a good recipe even if you are not following Keto. You could actually use real brown sugar instead of the blend if you wanted the “real” thing. Bacon is a wonderful thing. lol Hope you both enjoy it!
