Ingredients of Keto Cornbread Muffins

Keto Cornbread Muffins
Ingredients
- 2 cups Almond Flour
- 2 tbsp Baking Powder aluminum free
- 1 tsp Salt
- 1 Stick Grass-fed Butter melted
- 3 Eggs beaten
- 1 cup Sour Cream
- 1 tbsp Amoretti Sweet Corn Extract see link in article
- 1 1/2 tbsp Liquid Monk Fruit
- 1 tbsp Butter if using skillet method
Instructions
- Preheat oven of 400 degrees F (204 degrees C)
- If using skillet method - melt 1 tbsp butter in skillet and let skillet heat up
- Mix all the dry ingredients together in a large mixing bowl
- Mix wet ingredients, excluding butter together.
- Slowly add wet ingredients to the dry mixture, adding butter last
- Pour into muffin cups or into the preheated skillet
- Cook for 25 - 30 minutes or until brown and inserted toothpick comes out clean
- For muffins, cook 20 - 25 minutes
- Let cool 5 minutes.
Cooking times can vary based on your appliance and altitude/elevation.
You can make this in a muffin pan or in a cast iron skillet like my mom always did.
