Cornbread muffins are so delicious, but many times off limits when following a Keto or gluten free way of eating / diet.  Worry no more – this recipe is your answer to enjoy cornbread muffins again!

This recipe is perfect for your gluten free, low carb or Keto Thanksgiving stuffing / dressing, with Keto Chili, your favorite soup or just with butter on top.  YUM!

History of Cornbread

Cornbread has a rich history.

According to Medium, cornbread was first introduced in America by the pre-European Native Americans when they used maize, ground into a meal and mixed with water and salt.

The Europeans were first to modify the recipe, reflecting the cooking style of their home nations. They added ingredients brought from overseas, like wheat.

Cornbread is an important part of southern culture, maybe because it was inexpensive to make. 

I can remember my mom eating cornbread with red beans or crumbled up in a glass with buttermilk.

This recipe has all whole, clean ingredients. You can read more about why clean eating is important here. 

Grass fed butter is best for your Keto Cornbread Muffins due to the nutrients and healthy fats. No margarine allowed here!
Margarine is full of unhealthy ingredients, including hydrogenated oils that are bad for your health. 
 
Replace traditional white flour with almond flour.  I prefer the Kirkland brand of almond flour due to the smoother texture. All my baked goods have a better consistency when I use it instead of other brands I have tested.

Also make sure your baking soda is aluminum free like this one. Aluminum has been tied to cognitive issues such as dementia and Alzheimer's. 

 
Yes, the type of salt you use matters too.  I prefer Redmond Real Salt that you can find here. 

 
Whenever possible, we get eggs from my brother-n-law's farm. We know the chickens are free-range and raised humanely.  You can find free range chicken eggs in the grocery store also. 
 
Sour cream takes the place of buttermilk. When buying sour cream, look at the ingredients to ensure they are clean. Also, read the food label to make sure you are getting the one with the least amount of carbs. 
 
Next, the liquid monk fruit or stevia is to help add back sweetness lost by not using high carb and GMO corn like you do in traditional recipes. 

 
And last but not least, here's the special key ingredient, Keto Cornbread Flavoring!
My world changed when I discovered this. Who knew?  

If I want the cornbread right away and don't have the cornbread flavoring yet, use 1 tablespoons of almond flavor instead.

Keto Cornbread Muffins

Ingredients
  

  • 2 cups Almond Flour
  • 2 tbsp Baking Powder aluminum free
  • 1 tsp Salt
  • 1 Stick Grass-fed Butter melted
  • 3 Eggs beaten
  • 1 cup Sour Cream
  • 1 tbsp Amoretti Sweet Corn Extract see link in article
  • 1 1/2 tbsp Liquid Monk Fruit
  • 1 tbsp Butter if using skillet method

Instructions
 

  • Preheat oven of 400 degrees F (204 degrees C)
  • If using skillet method - melt 1 tbsp butter in skillet and let skillet heat up
  • Mix all the dry ingredients together in a large mixing bowl
  • Mix wet ingredients, excluding butter together.
  • Slowly add wet ingredients to the dry mixture, adding butter last
  • Pour into muffin cups or into the preheated skillet
  • Cook for 25 - 30 minutes or until brown and inserted toothpick comes out clean
  • For muffins, cook 20 - 25 minutes
  • Let cool 5 minutes.

Cooking times can vary based on your appliance and altitude/elevation.

You can make this in a muffin pan or in a cast iron skillet like my mom always did.
